SAM CHOY

INGREDIENTS

Ahi Poke

  • 1 pound fresh ahi, cut into small cubes
  • ½ teaspoon salt
  • ½ cup onions, minced
  • ¼ cup green onions, minced
  • 1/3 cup ogo, chopped
  • 1 Hawaiian Bird pepper, minced
  • 3 tablespoons Aloha Shoyu Poke Sauce
  • 1 tablespoon Aloha Shoyu Oyster Poke Sauce

Salmon Poke

  • 1 pound fresh salmon, cut into small cubes
  • ½ teaspoon salt
  • ½ cup red onions, minced
  • ¼ cup green onions, minced
  • 1/3 cup ogo, chopped
  • 2 tablespoons tobiko
  • ¾ cup mayonnaise
  • 3 tablespoons Aloha Shoyu Poke Sauce
  • 1 tablespoon Aloha Shoyu Oyster Poke Sauce

Lomi Tomato

  • 1 medium tomato, diced
  • 2 tablespoons onions, minced
  • 1 tablespoon green onions, chopped

Avocado Layer

  • 1 ripe avocado, chopped

Rice Layer

  • 1 cup cooked rice, room temperature

Spicy Mayonnaise

  • 1 tablespoon mayonnaise
  • ½ tablespoon Sriracha

DIRECTIONS

  • In a mixing bowl, add ahi and 1/2 teaspoon salt.
  • Mix well and let set for about 2-3 minutes.
  • Add onions, green onions, pepper, ogo, and Aloha Shoyu Poke Sauce. Mix well and chill.
  • In a mixing bowl, add salmon and 1/2 teaspoon salt.
  • Mix well and let set for about 2-3 minutes.
  • Add onions, green onions, ogo, tobiko, and Aloha Shoyu Poke Sauce.
  • Mix well then add mayonnaise. Mix well and chill.
  • In a bowl, add tomato, onions, green onions, and avocado. Mix well.
  • On a plate, use a round cylinder to mold the bottom layer of rice.
  • Add a layer of salmon poke, chopped avocado, ahi poke, and lomi tomato mixture. Use the back of a spoon and press each layer firmly. Carefully remove the mold to reveal tower.
  • Drizzle with spicy mayonnaise and enjoy!
