INGREDIENTS
- 2-3 Tbsp Honey
- 12 oz Aloha Shoyu Spicy Gluten-Free Teriyaki
- 2-3 Tbsp Mirin
- 5 Tbsp of Canola or Vegetable oil
- 3 Tbsp of Water (for slurry-thickener)
- 2 Tbsp cornstarch (for slurry-thickener)
- 1 stick of unsalted butter
- 15-20 Cloves of Garlic (finely diced)
- 1-Onion (diced)
- 2-Red chilies (finely diced w/seeds removed)
- 2-Jalapenos (finely diced w/seeds removed)
- ½ bunch Green onions (chopped)
- 2-3 Chinese eggplant
DIRECTIONS
- Prepare your eggplant by cutting them in halves, lengthwise, and then cut in half again. Then carefully score the eggplant innards (diamond pattern), season with salt, and set aside.
- Heat a large sauté pan over medium-high heat. Add ½ stick of butter and 3 Tbsp of oil, then allow mixture to melt/get hot. Add eggplant into pan, scored side down and cook until the eggplant innards are golden and softened. Once the eggplant is golden brown, flip it over, skin side down. Drizzle honey over eggplant, and add splash of water. Decrease the heat to medium and cover the pan to allow it to steam. Once the water is dissolved, remove the eggplant from the pan and set aside.
- To the same pan, add the remaining 1/2 stick of butter, and the remaining 2 Tbsp of oil, then sauté the onion and garlic for a minute or two. Then add the peppers and green onions. Turn the heat down to medium-high, and add the green onions and allow to continue to cook and soften. Add the Aloha Shoyu Spicy Gluten Free Teriyaki sauce in, then add the mirin. Allow sauce to come to a simmer. Add cornstarch and water (slurry) to thicken to your desired thickness. Lastly add the eggplant back into the sauce and allow to simmer for a few minutes gently. Remove the eggplant from the pan and plate. Pour the remaining sauce onto the Eggplant, Garnish with green onions, and serve over rice.
